Oatmeal biscuits

2 cups flour
3 tsp baking powder
1 tsp salt
1/4 cup shortening
3/4 cup milk
1/2 cop quick cooking oats
1/2 cup shredded cheddar cheese
2 tsp chopped or dried chives
1 tsp garlic powder

heat oven to 450. measure flour, baking powder and salt into bowl, cut in shortening thouroughly, until mixture looks like a meal. stir in milk.

knock back dough on lightly floured cloth covered board, knead lightly 20 to 25 times, about 1/2 a minute, roll til its about 1/2 inch thick, cut with floured bisquit cutter, place on ungreased baking sheet, bake 10 - 15 mins or til golden brown.

you can pretty much add any kind of herbs or spices to these.

makes about 15 biscuits





 RedNeck Tator Casserole


 8 tators (potatoes) peeled and sliced thin

 crisco awl ( oil )

 1 lb ground beef

 1 cup of chopped onion

 1 Bell pepper chopped

 1 jalopeno pepper ( optional)

 1/4 cup flar ( flour )

 1 tbsp corn starch

 1/4 cup milk

 1 cup of shredded cheddar cheese

 1 can of Korn (corn)


First y' all fry the tators  and half the onions in the crisco till golden, then put aside.
then y' all  brown the ground beef with the leftover onions, bell peppers and jalopeno's, add the flour,  corn starch and milk cook all together, till you get like a beef and gravy mixture, set aside. Then in a baking dish oil the bottom with crisco, then put a layer of tators, then a layer of corn, then beef, then cheese, and repeat til the dish is full to the top. bake in oven at 425 for 35 mins, then top with more cheese till melted.


When y' all are done Ettin (eating) serve up sum (some) chocolate pudding (pudding) for sert ( dessert.)

Smoked turkey rollups

6 flour tortillas
1 8 ounce block of cream cheese
1/2 cup shredded or chopped cheddar
1/4 cup chopped onion
1 cup smoked turkey or leftover chicken
2 cups fresh spinach
1 tomato diced
1 can ortega chili's
toothpicks

put cream cheese, cheddar cheese, onion and turkey into a food processor or blender, blend on high for about 3 mins or until it is all a dip like consistency, then let sit, take the tortilla's and spread the mixture onto each tortilla, then put sow of the spinach leaves on top of the mixture, then some of the chili's and some of the tomato, then roll the tortilla up and secure with toothpicks, and put onto a cookie sheet and do this with each tortilla, when all are rolled and secure and on the cookie sheet let chill for about 2 hours, but overnight is best, once they are chilled, slice each tortilla jellyroll style into 1/4's then put on a tray and serve, these are soo yummy! a great appetizer or you could make a meal with them and serve them with soup or a salad for a nice light summer dinner.
